Rhubarb Pie and Barbecue Chicken Pizza

It has been a week of rhubarb. 15# of rhubarb! That translates to...

(and yes, my favorite place to photograph food lately has been on my back porch.)
I was going back over old posts, and though there are posts from the past two years featuring piles of rhubarb and pics of rhubarb pie, I have never actually shared my rhubarb pie recipe. So, here it is. I always make pie crust using the recipe from the Pillsbury cookbook, but I am also a whole-hearted fan of Pillsbury frozen pie crust. It is almost as good, without any effort.

Rhubarb Custard Pie (one pie)
-double pastry crust

Line a 9" pie plate with one crust.

-Beat:
3 eggs
3 Tbsp milk

-Add, mixing until smooth:
2 cups sugar
1/4 cup flour
3/4 tsp nutmeg

-Stir in:
4 cups chopped rhubarb

-Pour into a 9" pie crust. Cut vent holes in the remaining crust. Top the other crust, and pinch edges to seal. Brush with 1 Tbsp of milk, and sprinkle with a mixture of 1 tsp sugar and a sprinkle of cinnamon.

-Bake at 400 degrees for 10 minutes, and then lower the temperature to 350 degrees and bake for an additional 30 minutes.

But, I can't leave you with only a dessert recipe. Though I LOVE dessert, I do feel that protein is a good thing.

Barbecue Chicken Pizza on the Grill
1 package yeast
1 cup warm water
2-1/2 cups flour
1 tsp salt
2 Tbsp oil
1 tsp sugar
1 pound boneless, skinless chicken breasts, cubed
1/2 to 3/4 cup barbecue sauce
1/2 cup julienned green pepper
2 cups (8 oz) shredded Monterey Jack cheese
(opt) bleu cheese crumbles, french fried onions, bacon bits

-Combine flour, yeast, 1 tsp salt, and sugar. Add 1 cup of warm water and 2 Tbsp oil. Beat vigorously by hand until combined. Cover and let rest 15 minutes.
-Preheat grill.
-Cube chicken breasts. Saute' in a skillet until cooked through. (alternately, you can grill the whole chicken breasts and cube after they are grilled) Combine with barbecue sauce.
-Julienne green pepper.
-Roll out crust onto a greased 12” pizza pan. Grill, covered, over medium heat for 5 minutes.
-Spread chicken mixture over crust. Top with green pepper and cheese.
-Return to grill. Grill 5-10 minutes longer, until the cheese is melted and the crust is golden.
*can bake-following the same steps. 450 degrees. Second baking may be more like 10-15 minutes.
